Originating in Thailand, this stir-fried noodle dish was popularized during the 1930s and 1940s under Prime Minister Plaek Phibunsongkhram’s regime. It was part of a national campaign to promote Thai nationalism and reduce rice consumption during a period of economic hardship.

What Makes Pad Thai Special?

Pad Thai is known for its perfect balance of flavors – sweet, sour, salty, and umami – which come together to create a truly harmonious dish. The combination of fresh ingredients, such as rice noodles, shrimp, chicken, or tofu, bean sprouts, peanuts, and a tangy tamarind sauce, makes it a delightful feast for the senses.

Recipe: Classic Pad Thai

Ingredients:

  • 200g rice noodles
  • 200g shrimp (peeled and deveined) or chicken breast (sliced thinly)
  • 2 eggs
  • 1 cup bean sprouts
  • 1/2 cup roasted peanuts (chopped)
  • 2 green onions (chopped)
  • 1 red chili (sliced, optional)
  • 3 cloves garlic (minced)
  • 2 tablespoons vegetable oil
  • Fresh cilantro and lime wedges for garnish

For the Sauce:

  • 3 tablespoons fish sauce
  • 3 tablespoons tamarind paste
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce

Instructions:

  1. Prepare the Noodles: Soak the rice noodles in warm water for about 20 minutes or until they are soft. Drain and set aside.

  2. Make the Sauce: In a small bowl, mix the fish sauce, tamarind paste, sugar, and soy sauce until the sugar is fully dissolved. Set aside.

  3. Cook the Protein: In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp or chicken and cook until done. Remove from the pan and set aside.

  4. Scramble the Eggs: In the same pan, add the remaining tablespoon of oil. Crack the eggs into the pan and scramble until fully cooked.

  5. Combine Ingredients: Add the garlic to the pan and sauté for about 30 seconds until fragrant. Add the soaked noodles, cooked shrimp or chicken, and the sauce. Toss everything together until the noodles are evenly coated with the sauce.

  6. Final Touches: Stir in the bean sprouts, green onions, and half of the chopped peanuts. Cook for another 2-3 minutes until everything is well mixed and heated through.

  7. Serve: Transfer the Pad Thai to a serving dish. Garnish with the remaining peanuts, fresh cilantro, and lime wedges. Add sliced red chili if you like a bit of heat.
